avocado on toast. nothing could be, or is actually better. avocado on toast is a breakfast staple in this house, but i took a little inspiration from an instagram post mckel hill from nutrition stripped posted a bit ago and decided on adding some toasted sesame seeds and honey on top. also, i always add a sprinkle of coarse salt because it’s delicious.

as it finally snowed here in the city, both camden and i were feeling something warm and hearty for breakfast this morning. after waking up bright and early and grabbing our morning caffeine, we headed to the grocery store in our thick coats and wool socks for something special. we decided on warm irish oatmeal, with a side of steamed milk (or silk for me), topped with fresh fruit, and brown sugar. juder-bug had his morning nap while we made and ate our brunch and then surprised us with he sweet smiling face as soon as we were finished. it has been one of the best sundays we’ve had in a long time … and it’s all thanks to the snow.

just photos of our sunday family time with a dairy-free breakfast oven baked almond pancake. i downloaded the green kitchen app and have enjoyed making a lot of dairy free as well as a few vegan recipes. i’ve also been trying to alter a few other recipes to make them dairy-free. this pancake was definitely a success. also, it’s currently late at night, i’m laying on our bed next to a sleeping kramer and baby jude, and feel like this post is completely scatterbrained. really all i want to say is that sunday mornings are my favorite mornings. that is all. the end.

i made my first gluten-free/vegan but most importantly and unnecessarily stated, dairy-free brunch on sunday thanks to the healthy vegetarian food blog, green kitchen stories. i originally found this recipe on pinterest and was immediately intrigued because it looked that delicious. i was a bit skeptical at first because of this skewed perception i have of all vegan things tasting a little off, for a lack of a better word. however, this blueberry and blackberry crumble was anything but off and surpassed any and all expectations i had, furthermore, living up to those beautiful photos i first saw on pinterest … plus, it’s easy and we all know i will almost never unfriend a simple recipe that has only just a handful of ingredients. we topped our crumble with dairy free, coconut based, vanilla ice-cream and it was just perfection. even camden couldn’t tell any difference which was all the proof i needed. click here for the recipe!

almost a weekend brunch …

the four of us have come to find that when life introduces a baby, everyday events and simple tasks seem to take way longer than they ever did before. i had originally planned this brunch for sunday morning which quickly turned into wednesday morning which then soon became wednesday evening. so truthfully, camden and i ended up eating our sunday morning brunch for wednesday dessert instead. it was delicious all the same. i made four gooey, caramelized, buttery baked peaches courtesy of pinterest … camden ate three of them because they were that good. and yes, we did eat them off paper plates with plastic spoons … operation no more dishes 😉

brown sugar baked peaches 

you will need (per peach):
a peach
one – two teaspoons of brown sugar
one half tablespoon of butter
a sprinkle of cinnamon


cut peaches in half, remove pit, and lay skin side down on a baking sheet. in the center of each peach, place the butter, brown sugar, and cinnamon. bake for 30 mins or until peaches are golden and tender (the time may be shorter if your peaches are really ripe). enjoy!
