this is my version of healthy crepes. however, this should really be taken with a grain of salt as i, myself, am no expert when it comes to eating healthy. this is especially when you consider that the healthy meals i’ve been eating throughout my pregnancy have consisted primarily of grilled chicken and apples … the grilled chicken usually being from chick-fil-a and the apples often being coated with cinnamon sugar. so let it be known that this recipe needs a little wiggle room under the definition of healthy really hovering somewhere in between healthy and not …

healthy-ish crepes – serves two

you will need:
2 eggs + 4 egg whites 
4 tablespoons of flour
1 teaspoon of sugar
a dash of vanilla 
a dash of salt


on medium heat, grease a pan suitable for crepes. pour just enough batter in to thinly cover the pan. flip when crepe becomes golden, then remove when the other side is the same. makes about 6 crepes. we ate ours with a mixture of maple syrup and apricot jam. like i said … really healthy 😉

saturday i made this lemon zucchini bread that seriously made the whole house smell extra wonderful for the rest of the day. i again found this recipe on pinterest a few days prior … because all recipes ever worth finding seem to be found on pinterest of course. we ate it for brunch mid-sunday morning and we were both pleasantly surprised by how good it was. it definitely does not have your typical zucchini bread flavor but instead resides somewhere closer to a lemon loaf with just a hint of zucchini. my favorite thing about it was how moist this bread was. we will be sticking this treat into the “absolutely making this again” recipe file.

recently, i’ve been trying to collect a few really simple and delicious recipes … ones that i could turn to in a pinch. so, when i saw this cooked banana with peanut butter, chocolate chips, and coconut on top while browsing pinterest (where else) the other day, i knew we had to try it. and … i’m so glad we did! it’s super easy and we’ve already had it a few times since. plus, i’ve been unusually into bananas lately … such a strange thing to be into but they just always sound really good. i think i might make it for dessert tonight while we watch our guilty pleasure, the bachelor (camden would like me to mention here that it’s mostly my guilty pleasure and he just watches it to be nice … but i think we all know he secretly loves it too).

this has become my new very favorite thing to eat, well, for any meal really. it’s this delicious, super moist gluten-free bread by new grains that has been toasted with chicken salad on top. i don’t usually eat gluten-free and actually picked up this bread by mistake one day at the store, but it makes the perfect combo paired with the chicken salad. we had this for brunch yesterday morning and then roasted some asparagus with a reduced balsamic glaze for a side (not pictured) because as you all probably know, asparagus is that other thing i just can’t seem to ever get enough of. on a side note, writing and editing a food post at night is definitely never a good idea … it’s making me soo hungry … it doesn’t help much that camden is eating a huge piece of chocolate cake right beside me…
