here is what you need to know about george. george is the tiger on my shirt. i met him a few years back  while scanning the sale rack at an urban outfitter store after a not so brilliant day. i don’t know what it was about this tiger tee but george and i instantly fell in love… you could say we were meant to be. you should also know camden didn’t like george so much at first. in fact, camden hated him. my day had already been on the un-fabulous side and my (at the time) newlywed husband mocking my new thrifty find really got my blood boiling. a heated argument and a few tears later we calmed down and camden decided the only thing to make me feel better now was to watch an old audrey hepburn movie of my choice … of course while wearing my new “goofy” top. i decided on sabrina and then named my silly tiger shirt after one of my favorite quotes in the movie.

” there were gardeners to take care of the gardens, and a tree surgeon on a retainer. there was a boatman to take care of the boats: to put them in the water in the spring, and scrape their bottoms in the winter. there were specialists to take care of the grounds: the outdoor tennis court and the indoor tennis court, the outdoor swimming pool and the indoor swimming pool. and there was a man of no particular title who took care of a small pool in the garden for a goldfish named george.”

so the name stuck with my tiger and i still pull him out every so often when i’m having a slightly under the weather day. he helps pick me up and reminds me of a little goldfish named george…

because it’s my wonderful husband’s birthday today, i thought i’d share with you his very favorite birthday cake recipe. happy birthday camden, i sure do love you.

for the cake you will need: (cake recipe by ina garten)
3/4 pound (3 sticks) unsalted butter, at room temperature, plus more for greasing the pans
2 cups sugar
5 extra-large eggs, at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons pure almond extract
3 cups all-purpose flour, plus more for dusting the pans
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup milk

preheat the oven to 350 degrees f. grease 2 (9-inch) round cake pans, then line them parchment paper. grease them again and dust lightly with flour.

in the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar on medium-high speed for 3 to 5 minutes, until light yellow and fluffy. crack the eggs into a small bowl. with the mixer on medium speed, add the eggs 1 at a time, scraping down the bowl once during mixing. add the vanilla and almond extracts and mix well. the mixture might look curdled; don’t be concerned.

in a separate bowl, sift together the flour, baking powder, baking soda and salt. with the mixer on low speed, alternately add the dry ingredients and the milk to the batter in 3 parts, beginning and ending with dry ingredients. mix until just combined.

pour the batter evenly into the 2 pans and smooth the top with a knife. bake in the center of the oven for 45 to 55 minutes, until the tops are browned and a cake tester comes out clean. cool on a baking rack for 30 minutes, then turn the cakes out onto a baking rack to finish cooling.

for the frosting you will need: (frosting recipe passed down from my mom)
2 1/2 cups of powder sugar
1/2 stick of butter at room temperature
2 tablespoons of milk
1 lemon freshly squeezed
the zest of 1 lemon
a pinch of salt
a drop or two of vanilla
shredded coconut
combine together until smooth. taste to test then frost. sprinkle with shredded coconut.
the end, enjoy!

this weekend our brunch turned out to be more like lunch on account that we stayed out until three playing poker with a few friends the night before. on the plus side, i won second place, which doesn’t sound like much but is sadly the closest to winning i’ve ever come. however, our four-thirty bedtime gave us another first … waking up at almost noon. i can’t even remember the last time i slept past nine in the morning let alone noon. honestly this is one first i would not like to repeat. our brunch … or lunch rather,  still happily turned out lovely. we had eggs over medium, country style hash browns, english muffins, and fresh fruit. camden had plums and i, a grapefruit. – and of course there was a little …”lucy!” “i’m home!”

as i put the final touches on this bathroom makeover saturday afternoon (the final five hour touches), i came to realize just how large this “little” project had really become to be.  like always, this was no small project. however, this is not to say that i, no, we are not extremely pleased with the room’s new look. looking back now, i really wish i would have taken before pictures to show you just how bad she really was. the paint alone made a huge difference. having all the walls and ceiling white really expands the room and makes it feel ten times larger. i’m also extremely happy with the total cost of our newly renewed space. honestly, i wasn’t looking to spend much. sure, if this was “our” home i may have invested more in high quality pieces or a new bathtub to say the least, but because we are renting and because this space isn’t ours, is exactly why i didn’t want to dump loads into a bathroom that won’t be ours forever. i wanted to make sure that the things i was putting in were things we could take with us when we moved or at least things we would be fine with leaving behind. – and i think i accomplished that. although i am over the moon happy with how she looks, i, in the end spent only a little less than $150 on everything and ninety percent off that can come with us when we leave (which is hopefully not soon!). so here, in all her glory, she is … enjoy.
