this is the first cake i ever made for cam. it was for his birthday 5 years ago and i have been making it ever since. i love it because it is so simple to make and it is perfect for spring time. the cake part it is actually just from a box, i use a lemon flavored one then just add a squeeze of lemon and a bit of zest to give it a little kick. the frosting however, is what really tops it off. it is a recipe my mom made us growing up, it had us kids eating frosting by the spoon full hardly leaving any for the actual cake. it is really versatile as well, it can be used on just about any cake by changing the flavors. i like to make yellow cakes and use this frosting recipe by substituting the lemon with coco powder and adding an extra tablespoon or two of milk. i hope you enjoy this simple frosting recipe as much as we do – let me know if you try it out.
-lemon lemon frosting-
{frosting will cover about a 9×9 inch cake}
in a bowl of an electric mixer – or mixing by hand
combine together:
2 1/2 cups of powder sugar
1/2 stick of butter at room temperature
2 tablespoons of milk
1 lemon freshly squeezed
the zest of 1 lemon
a pinch of salt
a drop or two of vanilla
and that’s it. after the frosting is completely mixed and the cake is cool, frost. camden likes his cake topped with fresh raspberries and i prefer mine with a light dust of coconut, however the cake is delicious all on its own as well – enjoy!

I make a similar type of cake for my husband's birthdays because he's a huge fan of lemon and yes, I put the raspberries on top as well. π Always a crowd pleaser. I love your photos.
