lila may
when kacie, a dear reader, asked me if there was anything i could do to share little lila may’s story, a sweet baby girl battling childhood cancer, i knew i had to do something to help. i tend to usually shy away from asking others to give what they can but i think in lila may’s case i can and will make an exception. below is a little note from kacie.

lila may is a little girl in our little town. she turned three this week. we have run into lila and her mom, heidi, several times at the grocery store and parks, and naturally, she and gigi, my daughter, have a lot in common. they have mostly talked about pink shoes, shared treats, gone down slides together, and smiled shyly at one another. for the past year lila has been fighting a type of childhood cancer called neuroblastoma. lila has undergone several rounds of chemotherapy, radiation, surgery to remove tumors, a stem-cell transplant, and immunotherapy. i first learned about lila’s illness last winter when i came across a flyer encouraging people to come and take photos with santa, the proceeds of which would benefit lila and her family’s mounting medical costs. when i read her story, i just cried. it felt so close to home.

– laying out birthday outfit possibilities …
– a lime tart i made for brunch a few weeks ago and never got around to posting. you can see the recipe here if you would like to try it.

– a wild thunderstorm wiped out our power for a few hours a bit ago and i finally had a legitimate excuse for my candle obsession.
– these shoes arrived in the mail today just in time for my birthday tomorrow … couldn’t have asked for a better present!

p.s. sorry for the quiet blog this past week … we had our computer in getting a repair it had needed for a few months …

this is my all time very favorite apple pie. not just because my mom would make it when i was growing up as a kid, but because i honestly believe it is the very best. i have, to this day, not tasted a better pie and better yet, as far as pies go, this one is extremely simple, easy, and relatively quick to make. i spent saturday afternoon cooking up this one and we ate about half of it before camden left with his dad camping sunday morning. i’ve included the recipe below so now you”ll have to go and promise to make it!

for my very favorite apple pie you will need...

2 cups + 3 tablespoon flour
2/3 cups shortening
1 and 1/4 teaspoon salt
6 tablespoons cold water
5 large granny smith apples
1 cup of sugar
1 teaspoon cinnamon
dash nutmeg
1 pie dish

for the crust

preheat the oven to 400 degrees. cut together 2 cups of the flour, shortening, and 1 teaspoon of the salt. once combined, mix in the water until dough sticks together nicely … not too wet and not too dry. split dough in half and roll out two round sections, one for the top and one for the bottom. place one of the layers into the pie dish.

for the filling

slice all the apples into small thin wedges (an apple peeler works just amazingly) and place the apples into a large mixing bowl. add sugar, cinnamon, 3 tablespoons of flour, 1/4 teaspoon of salt, and nutmeg. gently mix with a wooden spoon until everything is evenly combined. pour the apple mixture into the pie dish and cover with the top layer of pie crust dough. seal the edges together with the prongs of the fork and make a few slits in the top of the crust to ventilate. cover just the crust’s edges with tinfoil and bake for 30 minutes. take off the tinfoil and bake for 15 minutes more. remove the pie from the oven, let cool, serve, and enjoy!

summer is hot enough when you have an air-conditioned home to keep you cool from the blistering heat that awaits outside, but living in a small apartment with no a.c. has at times, for us at least, seemed unbearable. i, for one, can stand the cold mostly because there are always so many things you can easily do to get warm … for example: layering on more clothing, putting a heavier blanket on the bed, drinking a cup of hot cocoa … but when it comes to cooling down, it seems the options are far more limited especially when turning down the thermostat isn’t exactly an option. living through our first hot season with no more than a dinky removable air-conditioning unit to keep cool has been interesting to say the least, but as the heat of the summer has ruthlessly progressed, i’ve picked up tidbits of cooling tricks/ideas along the way that have really worked for us thus far.

– keep a glass of ice cold water or a bowl of ice chips by the bed at night. it’s a great trick when we need something quick to cool down.
– invest in thick curtains or double-up your current ones in rooms that have windows getting direct sunlight during the day. this has helped keep our home (on average) four degrees cooler during the day. it doesn’t sound like much but sometimes four degrees can feel like ten.

– find a decent/quiet fan that can blow air throughout the bedroom during the night. for us (me especially) sleeping has been the hardest part of this hot summer so having a fan that can constantly blow air on us/within our bedroom has made the biggest difference i can’t even tell you. i found this one at target. i really like it because it looks nice, works really well, and as far as fans go is decently quiet.
– stock up on popsicles and watermelon because nothing sounds better during the hottest part of the day than some cold, freshly sliced watermelon or a frozen popsicle.

– request your window unit be placed in the room that will be used most even if your landlord wants to put it elsewhere. our landlord previously had our window unit in our dinning room which is not used nearly as much as our family room. having it moved there helps keep the rooms we do use most (the family room, kitchen, and bedroom) cooler than the ones that don’t get used as often (the dining room and office).
– take a cold shower before bed. camden especially likes to do this. it’s brutal for a few minutes while you cool down but if you can handle it, it helps a ton while trying to go to sleep.

– freeze grapes for snacking … mostly because frozen grapes are delicious!
– keep lights/television off as much as possible during the day to help keep things cooler. for us, doing this during the bulk of the day has helped keep our place a few degrees cooler and hey … every degree counts!

– make your favorite drink into ice cubes. i have done this with chai tea a few times this summer and i absolutely love it.
– when all else fails grab an ice pack from the freezer and lay on it. works every time …
